Food politics, the profitability of the food industry at the expense of our health There is an obesity epidemic and current nutritional guidelines are not working. Physicians are poorly trained about nutrition and they rarely discuss how to loose weight with their patients. The presentation looks at the history of nutrition, various government and industries such as the food industry and the healthcare industry that have had positive and or negative influence leading to present day nutritional guidelines which are not working. We then look at the science of metabolism and how the macronutrients interact with our physiology. We discuss the role of carbohydrates as the inflammatory fuel promoting insulin resistance, obesity, heart disease, diabetes and other diseases associated with adipose organ toxicity. We discuss eval and management of the overweight patient and associated medical conditions. Treatment involves tools to focus on carbohydrate restriction such as glycemic index, counting grams of carbohydrates, etc... We compare modern days diets low fat vs low carb and demonstrate the physiologic benefits of low carb diets vs low fat with studies over the past 10 years. We end with some examples of patients and a statement that physicians need to embrace an opportunity to prevent and treat disease through nutritional counseling with their patients.
